There won’t just be two Undertale Nendoroids. A third one is on the way. In addition to Sans and Papyrus, an Undyne Nendoroid is in the works. She appeared for the first time at WonHobby 35. The two boys showed up two, as painted prototypes were shown for the first time.
First, here’s the Undyne Nendoroid announcement. Only concept art for the upcoming character appeared. She will be wearing her full suit of armor for the figure.

As for Sans and Papyrus, both are painted for the first time. When Good Smile Company showed them off in December 2021, only unpainted prototypes of both were available. The latest reveal also didn’t show any possible accessories or additional face plates for them.

There’s no word yet on when any of these Undertale Nendoroids could appear. The Sans and Papyrus figures should appear ahead of Undyne, given that they’re already painted and have been in development since September 2021. No other Undertale figures appeared as part of the WonHobby 35 announcements.
